Squeeze all you can out of peach season with this delicious, healthy, and easy Grilled Chicken and Idaho® Potato Summer Bowl! Marinate the chicken in the morning to ensure it’s full of flavor by lunch or dinnertime. Place your potatoes and corn on the grill over medium-high heat and cook for 20-25 minutes, turning corn occasionally. Move to indirect heat and cook the chicken for 7 minutes per side. As your chicken cooks, prepare peach salsa by combining peaches, jalapeño, red onion, lime juice, and salt. Once all your ingredients are ready, assemble your bowl to your desired proportions.
