Welcome to Let's Eat, where we'll be sharing some of our favorite recipes with you every month! Our first edition of Let's Eat is all about this recipe for Penne with Arugula Pesto, Red Idaho® Potatoes and Spring Vegetables that tastes just as good as it sounds. After a few months of winter, we go crazy for fresh green veggies like the ones found in this recipe! Penne is tossed with a peppery arugula pesto, red Idaho® potatoes lend an earthy creamy bite and snappy spring peas offer bits of fresh sweet flavor.
