Ooey, gooey cheesy goodness! Easy to make and great for feeding the family when you don’t have a lot of time to make dinner, Potato Quesadillas with Ham and Cheese are delicious on their own or when paired with salsa or hot sauce. Mashed potatoes are evenly spread on the tortilla then sprinkled generously with cubed ham and shredded cheddar cheese. Top with a tortilla and fry on a pre-heated skillet until the cheese is melted-- make sure to flip them regularly so each side develops a light brown char. Before serving, place the quesadillas on a cutting board, cut into quarters and sprinkle with chopped parsley. We promise you won’t have any leftovers!
