Nutritious Vegan Mashed Idaho® Potatoes


  • Yukon gold Idaho® Potatoes
  • extra virgin olive oil, as needed
  • salt to taste
  • pepper to taste


  1. Cook potatoes in generously salted water.
  2. Run cooked potatoes through a food mill or coarse strainer/ricer.
  3. Add EVOO until desired consistency is reached.
  4. Add salt and pepper to taste.
